Can you say Sailfish?

Trolling through the Sea of Cortez, we hooked a 7ft, 70lb sailfish! Jason started it and I finished it. We now have ~40lbs of sailfish meat and no good recipes...yet!

    Sailfish is a very tough/dry meat and no one, not even the locals know what to do with it! Now we know, sailfish is a catch and release fish!
